Recommended Glassware:

Broad bowl, tall – oxidation (aerating or ‘opening up’ the wine) is desirable to encourage the complex flavours to be truly expressed.

Food Pairing:

Enjoy at room temperature and pair with lamb, beef, darker game meats (e.g. venison, rabbit), braised red meat dishes, firm cheeses (like cheddar, parmesan and pecorino) and dark chocolate – but not with creamy foods.
