The Australian Olive Association (AOA) have established the Australian Standards (AS 5264-2011) that outline a strict Code of Practice of classifying oils. To be classified as extra virgin olive oil, it must be ascertained that the oil has been extracted from the olive by mechanical processes only, and has also passed tests assessing chemical and taste (organoleptic) quality.
